  • 2 cups cooked rice Use day-old rice for best texture.
  • ½ lb beef, cut into small chunks You can substitute beef with chicken, shrimp, or tofu.
  • 2 eggs
  • 1 cup mixed vegetables (like peas and carrots) Frozen mixed vegetables can be used.
  • 2 tablespoons soy sauce Substitute with teriyaki sauce for a sweeter taste.
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • ½ onion, chopped
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Cooking

  • In a large skillet, heat sesame oil over medium heat.
  • Add garlic and onion, sautéing until the onion is translucent.
  • Add beef chunks and cook until browned.
  • Push the beef to one side of the skillet and crack the eggs on the other side. Scramble them until fully cooked.
  • Add the cooked rice and mixed vegetables into the skillet.
  • Pour soy sauce over the rice mixture and stir everything together. Season with salt and pepper to taste.
  • Cook for a few more minutes, allowing flavors to meld.
  • Serve hot, garnished with sliced green onions.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave until heated through.
