For the Potato Filling

  • 2 pounds potatoes, peeled and diced Use starchy potatoes like Russets or Yukon Gold.
  • 1 cup heavy cream Can be substituted with half-and-half for a lighter version.
  • ½ cup milk Can use light cream for a different flavor.
  • ¼ cup butter
  • 1 cup shredded cheddar cheese Experiment with different cheeses like Gruyère or mozzarella.
  • ¼ cup fresh chives, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pre-made pie crust Can make your own crust if preferred.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Boil the diced potatoes in salted water until tender, then drain.
  • In a mixing bowl, mash the potatoes and mix in the heavy cream, milk, butter, cheese, chives, salt, and pepper until smooth.
  • Place the pie crust in a pie dish and pour the potato mixture into the crust.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  • Let cool for a few minutes before serving.

Notes

Serve warm, garnished with extra chives or cheese on top. Pairs well with a crisp salad or steamed vegetables. Leftovers can be stored in the refrigerator for up to three days or frozen before baking for up to two months. To make ahead, bake and refrigerate, then reheat before serving.
