Ingredients
  

Pasta and Oil

  • 1 cup orzo pasta
  • 2 tablespoons olive oil

Vegetables

  • 1 each bell pepper, diced
  • 1 each zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced

Seasoning

  • to taste Salt
  • to taste Pepper
  • optional Parmesan cheese

Instructions
 

Cooking

  • Cook orzo according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add garlic and sauté for 1 minute until fragrant.
  • Add bell pepper and zucchini, cooking until tender, about 5 minutes.
  • Stir in cherry tomatoes and spinach, cooking until spinach is wilted.
  • Add cooked orzo to the skillet, mixing well.
  • Season with salt and pepper.
  • Serve warm, topped with Parmesan cheese if desired.

Notes

This veggie orzo pairs wonderfully with a side salad or crusty bread. Store leftovers in an airtight container in the refrigerator for up to three days. Consider using any vegetables on hand, and for extra creaminess, stir in cream cheese or ricotta.
