  • 3 ripe bananas, mashed Use overripe bananas for the best flavor.
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups all-purpose flour Can substitute with gluten-free flour.
  • 1 cup chopped walnuts Toast before adding for enhanced flavor.
  • ½ teaspoon ground cinnamon (optional)

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Mix in the mashed bananas.
  • In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the banana mixture, mixing until just combined.
  • Fold in the chopped walnuts.
  • Pour the batter into the prepared cake pan and spread it evenly.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

This cake can be served warm or at room temperature, delicious on its own or with vanilla ice cream. Drizzle with caramel sauce or sprinkle with powdered sugar for an extra touch.
