Ingredients
  

Meat

  • 1 pound ground beef
  • 1 pound chorizo

Vegetables

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 can diced tomatoes

Other Ingredients

  • 2 cups cooked rice
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Chopped cilantro for garnish

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook ground beef and chorizo over medium heat until browned. Drain excess fat.
  • Add onion, garlic, and bell pepper to the skillet and sauté until softened.
  • Stir in black beans, corn, diced tomatoes, cooked rice, cumin, paprika, salt, and pepper.

Baking

  • Transfer the mixture to a baking dish and sprinkle cheese on top.
  • Bake in the oven for about 20-25 minutes, or until the cheese is melted and bubbling.
  • Garnish with chopped cilantro before serving.

Notes

Cuban Casserole is best served warm, paired with a simple green salad or crusty bread. Leftovers can be delicious as next-day meals. Customize the recipe with favorite vegetables, add jalapeños for extra kick, or use leftover cooked meats to save time. You can also prepare it a day in advance and store in the refrigerator.
