Preparation

  • In a large pot, sauté onions until translucent.
  • Add diced potatoes and broth, bring to a boil, then simmer until potatoes are tender.

  • Season with salt and pepper.

Notes

Store any leftover soup in an airtight container in the refrigerator for up to 3 days. You can also freeze it for up to 3 months. For added flavor, consider using roasted garlic or a dash of cayenne pepper. If you want a thicker soup, blend a portion and mix it back in. For a lighter version, use low-fat milk instead of cream.
