  • 4 pieces boneless, skinless chicken breasts Can use frozen, thawed before cooking.
  • 4 cups diced potatoes Use your favorite variety.
  • 1 cup shredded cheddar cheese Can substitute with mozzarella or your favorite cheese.
  • 1 cup heavy cream For a lighter version, use low-fat cream.

Seasonings

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • to taste Salt and pepper

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large oven-safe skillet, heat olive oil over medium heat. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
  • Sear the chicken in the skillet for about 5 minutes per side, until golden brown.
  • Remove the chicken and set aside.

Cooking

  • In the same skillet, add the diced potatoes and heavy cream, stirring to combine.
  • Place the chicken back in the skillet on top of the potatoes.
  • Sprinkle the shredded cheddar cheese over the chicken and potatoes.
  • Cover the skillet with a lid or aluminum foil and bake for 30-40 minutes, or until the chicken is cooked through and the potatoes are tender.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Serve hot from the oven. Pair with a side salad or steamed vegetables. The creamy sauce is perfect for soaking up with crusty bread. For extra flavor, add herbs like rosemary or thyme, or red pepper flakes for spice.
