  • 1 lb ground beef Use lean ground beef for less grease.
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) cream of mushroom soup Substitute with cream of chicken for different flavor.
  • 1 cup shredded cheddar cheese Feel free to use pepper jack for a spicier version.
  • 1 package (32 oz) frozen tater tots
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, brown the ground beef over medium heat. Drain any excess fat.
  • Stir in the corn, cream of mushroom soup, garlic powder, salt, and pepper until well combined.
  • Spread the beef mixture evenly in a greased 9×13 inch baking dish.
  • Layer tater tots on top of the beef mixture, covering it completely.
  • Sprinkle shredded cheddar cheese over the tater tots.

Baking

  • Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly and the tater tots are golden brown.
  • Let it cool slightly before serving.

Notes

Cowboy Casserole can be served straight from the baking dish. It pairs well with a simple side salad or steamed vegetables. For extra flavor, add chopped onion or bell peppers with the ground beef. Can be made ahead and refrigerated for up to a day before baking.
