Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened
  • ¾ cup sugar
  • ¾ cup brown sugar
  • ¼ cup granulated coffee (or espresso powder)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Mix-ins

  • 1 cup toffee bits
  • 1 cup chocolate chips (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, sugar, brown sugar, and coffee until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, whisk together the flour, baking soda, and salt; gradually add to the coffee mixture until just combined.
  • Fold in the toffee bits and chocolate chips if using.
  • Drop rounded tablespoons of dough onto ungreased baking sheets.

Baking

  • Bake for 10-12 minutes, or until the edges are golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze them in a zip-top bag for up to three months. Allow to thaw at room temperature before serving. Consider pairing them with coffee or tea.
