Ingredients

For the marinade

  • 2 limes (juiced and zested)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

For the bowls

  • 1 lb steak (sirloin or flank)
  • 1 cup cooked rice
  • ¼ cup fresh cilantro, chopped
  • Optional toppings: avocado, corn, black beans, salsa Customize with your favorite toppings.

Instructions

Preparation

  • In a bowl, mix lime juice, lime zest, olive oil, garlic powder, cumin, salt, and pepper.
  • Marinate the steak in the mixture for at least 30 minutes.

Cooking

  • Grill or pan-sear the steak to your desired doneness (about 4-5 minutes per side for medium).
  • Let the steak rest for a few minutes before slicing.

Assembly

  • Serve the steak over a bed of cooked rice, and top with fresh cilantro and any additional toppings you prefer.

Notes

For a spicier kick, add chopped jalapeños to the marinade or as a topping. If you prefer a smoky flavor, try grilling the steak over charcoal. Letting the steak marinate longer enhances the flavor, so consider marinating it overnight if you have the time! Store leftovers in an airtight container in the refrigerator for up to 3 days.
