Filling

  • 16 oz Cream Cheese ensure it's at room temperature
  • 1 cup Peanut Butter smooth or crunchy depending on your texture preference
  • ½ cup Granulated Sugar adjust based on desired sweetness
  • 3 large Eggs beat until pale yellow
  • ½ cup Sour Cream Greek yogurt can be a healthy alternative
  • 1 teaspoon Vanilla Extract opt for pure vanilla for enhanced taste
  • 1 cup Heavy Cream or light cream/coconut cream for a lighter alternative
  • 1 cup Chocolate Chips dark or milk chocolate based on your preference

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and salt. Mix until well combined.
  • Press the crumb mixture into the bottom of a 9-inch springform pan to create the crust. Bake for about 10 minutes, then set aside to cool.

Filling Preparation

  • In a large mixing bowl, beat the room temperature cream cheese until smooth.
  • Add the peanut butter and continue to mix until combined.
  • Gradually add the granulated sugar and beat until creamy and smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the sour cream and vanilla extract, mixing until well combined.

Baking

  • Pour the filling into the cooled crust and smooth the top.
  • Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.
  • Allow the cheesecake to cool completely, then refrigerate for at least four hours, preferably overnight.

Serving

  • Before serving, whip the heavy cream until soft peaks form. Gently fold in the chocolate chips.
  • Spread the whipped cream mixture on top of the cheesecake before slicing.

Notes

Ensure your cream cheese is at room temperature to avoid lumps in your batter. For a gluten-free option, use gluten-free cookie crumbs for the crust. Feel free to add chopped peanuts or chocolate shavings on top for added texture and presentation.
