  • 1 cup cooked chicken, chopped
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the mixed vegetables and sauté for 2-3 minutes until tender.
  • Push the vegetables to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
  • Add the cooked chicken and rice to the skillet, mixing everything together.
  • Pour in the soy sauce and stir well, cooking for an additional 3-4 minutes.
  • Season with salt, pepper, and green onions before serving.

Notes

Use day-old rice for the best texture; it helps prevent the dish from getting mushy. Feel free to customize the vegetables based on what you have on hand. A splash of sesame oil at the end adds a lovely flavor twist!
