  • 1 cup cooked chicken, chopped
  • 1 cup mixed vegetables (carrots, peas, corn) Feel free to mix in other proteins or vegetables.
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce Adjust the level according to taste.
  • 2 tablespoons vegetable oil
  • 2 tablespoons green onions, sliced Use as garnish.

Preparation

  • Heat oil in a large pan or wok over medium heat.
  • Add mixed vegetables and sauté until tender.
  • Push vegetables to the side and pour in beaten eggs, scrambling until fully cooked.
  • Add the cooked rice and chicken, mixing everything together.
  • Pour soy sauce over the mixture, stirring well to combine.
  • Add green onions and season with salt and pepper to taste.
  • Cook for an additional 2-3 minutes, stirring continuously.
  • Serve hot.

Notes

This dish pairs well with soy sauce or spicy chili sauce on the side.
