  • 1 cup black beans (cooked or canned) Rinse canned beans to reduce sodium.
  • 1 cup rice (white or brown) For a healthier option, use brown rice.
  • 2 cups vegetable broth or water Use gluten-free broth if needed.
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 medium bell pepper (chopped)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder Add diced jalapeños for a spicier kick.
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Cooking

  • In a pot, heat some oil over medium heat and sauté the onion, garlic, and bell pepper until soft.
  • Add the cumin and chili powder, and cook for an additional minute.
  • Stir in the rice and cook for another 2 minutes.
  • Add the vegetable broth (or water) and bring to a boil.
  • Lower the heat, cover, and simmer for about 15-20 minutes, or until rice is fully cooked.
  • Stir in the black beans and cook until heated through.
  • Season with salt and pepper to taste.

Notes

Serve warm, paired with proteins like grilled chicken, fish, or tofu. Add lime juice or sour cream for extra flavor. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
