  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 cups enchilada sauce
  • 1 cup shredded cheese For topping
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef with onion and garlic until browned.
  • Add cumin, chili powder, and salt to the beef mixture.
  • Warm tortillas in the microwave to soften them.
  • Spoon the beef mixture into the tortillas and roll them up.
  • Place enchiladas in a baking dish and pour enchilada sauce over them.
  • Sprinkle cheese on top.
  • Bake for 20 minutes until the cheese is melted and bubbly.

Notes

Serve with sour cream, fresh cilantro, or sliced jalapeños. Pairs well with a fresh salad or Mexican rice. Can store leftovers in an airtight container in the refrigerator for up to three days.
