Ingredients
  

For the crust

  • 2 cups graham cracker crumbs Use finely crushed graham crackers.
  • ½ cup unsalted butter, melted Ensure butter is fully melted.

For the cheesecake filling

  • 3 packages (8-ounce) cream cheese, softened Make sure cream cheese is at room temperature.
  • 1 cup sugar Granulated sugar works best.
  • 3 large eggs Add eggs one at a time.
  • 1 cup apple butter Can use store-bought or homemade.
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon Adjust for more flavor if desired.

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a bowl, combine graham cracker crumbs and melted butter. Press this mixture into the bottom of a springform pan.
  • In a large mixing bowl, beat together the cream cheese and sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the apple butter, vanilla extract, and ground cinnamon until well combined.

Baking

  • Pour the cream cheese mixture over the crust in the springform pan.
  • Bake for 50-60 minutes or until set. Turn off the oven and let the cheesecake cool inside for 1 hour.
  • Remove from the oven and chill in the refrigerator for at least 4 hours before serving.

Notes

Serve chilled, plain or with whipped cream. For extra flair, sprinkle with cinnamon or drizzle with caramel sauce. Cover tightly for storage: lasts up to 5 days in the refrigerator or up to 3 months in the freezer. Press the crust firmly into the pan for stability.
